Honey-soy cod
**serves 4-6
Ingredients:
- 4-6 Cod Fillets (6-8oz each)
- 4 Cloves Garlic, minced
- 4 Tbsp Soy Sauce
- 3 Tbsp Honey
- 1-2 Scallions
A few notes on making this:
- I think cod is such an underrated fish— it has a nice mild flavor and cooks up quickly for a perfect weeknight dinner.
- Add a little extra honey and soy sauce if you are making more than four fillets.
- Take care not to cook your garlic very long in the hot pan or it will burn.
- Serve with ginger bok choy and rice for a complete dinner. Ready.
Directions:
- Pat the cod fillets dry with paper towels.
- Season with salt and pepper on both sides.
- In skillet, heat 2 tablespoons of olive oil on medium-high until hot.
- Add the seasoned fillets and cook 3 to 4 minutes on the first side, or until lightly browned.
- Flip fillets and add minced garlic to the pan. (I like using this fish spatula.)
- Cook, stirring constantly, 30 seconds to 1 minute, or until just fragrant (do not overcook your garlic, or it will burn and become bitter.)
- Add the honey and soy sauce.
- Cook, occasionally spooning the sauce over the fillets, 1 to 2 minutes, or until the cod is cooked through and the sauce has thickened.
- Remove from heat.
- Garnish with chopped scallions and serve with rice.
